Veganuary comfort food at its best: Creamy Mushroom Porridge🥣🍄

1 cup MOMA Jumbo Oats
1.5 cups MOMA Extra Creamy Oat Drink
1 tbsp olive oil or vegan butter
200 g mushrooms (whichever you prefer), sliced
1 small onion or shallot, finely chopped
2 garlic cloves
1 tbsp soy sauce or tamari
½ tsp dried thyme or a few fresh sprigs
Black pepper, to taste
Salt
Method:
1. Heat the olive oil or butter in a pan over medium heat.
2. Add the onion and garlic and cook for 3–4 minutes until soft.
3. Add mushrooms and thyme, cooking until they release moisture and turn golden.
4. Stir in soy sauce, cooking for 30 seconds until fragrant.
5. Add the oats and stir to coat them in the mushroom mixture.
6. Pour in the oat drink and bring to a gentle simmer.
7. Cook for 7–10 minutes, stirring often, until thick, creamy and spoon able.
8. Season with black pepper and salt to taste.
9. Serve hot with your choice of toppings.
